I may be wading into the Kaveri here, but a question arose recently in a mixed group about whether the Karnataka or the Tamilnadu interpretation of the classic idli-dosa breakfast was better.
Naturally the Kannadigas all thought that the Tamil sambar was the pits. It lacked jaggery which gave it that sweet-sour flavour that Kannadigas love and Tamilians hate.
The Tamilians thought that Kannadigas had no idea about how to serve idli or dosa. Where are the tri-coloured chutneys, demanded one Tamilian? And why is the sambhar runny?
As far as vadas go, both parties agreed that Karnataka had cracked the classic medhu-vada or uddin-vada as it is called here. In Tamilnadu you can get tired, soggy, sodden vadas unless you do some due diligence and choose the right hotel. In Karnataka, and specifically in Bangalore, it is hard to find a bad vada.
The real question had to do with idlis and dosas. Which do you prefer– the Chennai or the Bangalore version?
But first, let me lay out the rules of this particular battle. It is only based on tiny tiffin restaurants—called darshinis here in Bangalore. Your mother’s idli or dosa may be the best in the world but we don’t have access to that. We however have access to idlis from Veena Stores, Murugan Idli or Brahmin’s. The question is: which side of the border makes a better idli and dosa?
Some part of it is the batter. Do you use the 1:4 proportion of urad dal to rice or the 1:3? But this, I find, varies within families let alone states.
The difference, I think, is how a Kannadiga thinks of an idli versus a Tamilian. For a Kannadiga, the idli and chutney are both soloists playing a duet with each other. Bangaloreans obsess over the quality of the single white chutney that is served in most darshinis. Some go just for the chutney. Variety is not what they seek. They want quality in that one item. The idlis are equally important in that they need to be fluffy– spring up when you poke them with your finger.
A Tamilian on the other hand, thinks of an idli as an orchestra. You need at least three types of chutney, beginning with the white chutney, then some hot or “kara” red chutney made with tomatoes and onions, then a green chutney made with pudina or mint, or maybe kothamalli or coriander leaves. Three chutneys of three different colours to complement the white idlis. Then a Tamilian will want some milagai-podi or idli-powder. Finally, a non-jaggery sambar that has enough girth to float said idli. As for the idlis, they need to be as white and soft as a jasmine flower.
Why are Kannadigas not interested in multiple chutneys? One theory is that Udupi Brahmins who invented the masala dosa to hide the onions that they wanted to eat had those same restrictions when it came to chutney. They couldn’t do a red chutney because it contained onion.
The Tamil chutney was not similarly constrained. You could add garlic to the chutney if you felt like it and indeed a ginger chutney makes a fine addition to the Tamil idli platter. Hence the Kannada idli did a duet with the white chutney whereas the Tamil idli was the centerpiece of an chutney-laden orchestra.
The difference is just as stark when it comes to dosas. A Bangalorean wants a specific type of dosa made popular by MTR, Maiyas, Vidyarthi Bhavan and CTR among others. This dosai has to be thick, crispy on the outside and soft on the inside. The batter is less fermented relative to Tamil dosas, maybe because the weather is cooler in Bangalore. The batter has some avalakki or beaten rice in it, and perhaps a touch of jaggery, because the outside looks carmelised, almost black.
This whole dosa-concept is anathema to a Tamilian. In fact, I would go so far as to say that a Tamilian dosai is the opposite of a Kannadiga dosai. Tamilians want a golden brown dosai that is long and thin. It should be crispy outside, but because it isn’t as thick, this dosai will also crumple like a sigh after a few minutes on the plate. It will not hold its shape like a thick Kannadiga dosa. Tamilians cannot handle the level of ghee and oil that is poured on dosas in Karnataka.
What about the other ingredients of a South Indian breakfast? The Tamil upma versus the Kannada khara-bhaath. No question. The latter is better. The vada too is better here in Karnataka. The pongal though is better in Tamilnadu in my opinion. It is thicker. And for those who think that Tamilian dishes are just over-the-top with too many chutneys and sambars, I give you the pongal. It is often served with just one accompaniment—a brinjal gotsu or a white chutney. A well-made pongal, my brother says, must be eaten in reverential silence.
Karnataka has many more breakfast options relative to Tamilnadu—and this is perhaps why they lag in the number of chutneys area. At home in Karnataka, people eat akki (rice) roti, ragi mudde (ragi balls), avalakki (beaten rice), or neer dosa for breakfast. Why then would you invent so many chutneys to go with your dosai when you aren’t even eating dosas for breakfast at home?
The only thing left is the filter coffee.
Here, both places are even in my opinion, although Bangalore’s coffee is a tad better because most of the coffee estates are just a few hours away.
So which state does a better breakfast? Karnataka or Tamilnadu? Your call.
I prefer the Karnataka dosa. Idlis are the same but Brahmin’s idlis are softer.
Tamil Nadu breakfast is just out of the world idly molagapudi and kaara chetney will make your day. U must eat the pongal only in Tamil nadu, Bisi bele Baath only in karnataka Neer dosa in karnataka onion rava only in Tamil nadu , for better tasty breakfast Tamil nadu leads undoubtedly.

You forgot to mention about Onion dosa !! which is really stuffed with onion in Karnataka and tastes better than Tamilnadu.what about other varieties of breakfast available in Karnataka like lemon rice, Puliyogare, Tomatobath, Vegetable pulav etc. Certainly Karnataka has more varities for breakfast than Tamilnadu.
Karnataka is a better place with various options. The debate can be never-ending. Idlis for instance .. normal idli, malligai idli, rava idli, cup idli, thatte idli, mooda/kadubu (made in LEAF tumbler) … in TN besides the normal idli, we have rava idli and Kanjeevaram idli. Side dishes are optional and vary. Sambar and chatnis are certainly better in Tamilnadu.
I prefer the normal/masala/Neer/Akki dosa in Karnataka . Rava dosa though is good in tamilnadu.
Normal Vada is best in Karnataka .
Coffee is very good in Karnataka.
Tamil nadu Dosa, Vada and Idlis are far better. Karnataka idlis are like puttus and sambar is a sweet made with chilli powder. I don’t think you have any clue about Tamil nadu. Even a 5 rs mini vada is a gem here

For me, when it comes to South Indian snacks, Karnataka beats everyone hands down. Davanagere Benne Masale must have been handed down to us by the gods themselves. When it comes to South Indian meals, the Tamil heartland is the ultimate.
There are enough divides in the country, is one more required in the name of Idli? Why Andhra is not brought in. Instead of Tamilians, Kannadiga, Tamilnadu, Karnataka could have been used. There umpteen fast food developing in Bengaluru and other parts with Podi idli, being enjoyed by people. The regions have different traditions and food style, nothing is superior to another.

Actually, idli and dosa as well as chutney are tastier in some parts of Andhra. Guntur, Vijayawada and Ongole particularly. You get a sort of flavour of these in Chutneys in Hyderabad

I think Karnataka is best with breakfast options. For parents of small kids, it’s Karnataka breakfast that goes well. I am very happy if my kid likes the food. Idly chutney with butter, sweet sambar, crispy thick dosas, akki rotti, ragi rotti, kharabath, shavigebath of Karnataka score better.

Tamil Beakfast is good. It the sambar that clinches the deal. Jaggery is put in everything in Karnataka which is a big no!! I think i like Upma too. Upma should be bland accompanied by assorted Chutneys. And there’s Podi which is must for me.
Idly, Dosa was good on both states but tastes different in tamilnadu which batter is fermented and ratio varies. when this serves with multiple chutneys and Sambar by looking all this tamilnadu is better than Karnataka..

With the Grace of Lord Sri Krishna, I stayed for four years in Udupi and initially struggled to understand their preparation, but after an year, one by one I understood and by the time, my bad luck, I have moved out to Bangalore.
In terms of Dosae, Vada and coffee Bangalore is far ahead. In Idli the gap is slightly less even though I would vote for the Bangalore variety. The huge difference is Pongal, which TN is better. TN has no idea of rave idli so why draw comparison.b

Be it idli, Wada or Dosa. You will get the best taste in Mumbai. Not because they server these 3 items better than Bangalore. Just because of the coconut chutney.
No other state can beat the quality of white coconut chutney of Mumbai. Most of the places in Mumbai serves white chutney without/with very less coriander. I feel in Banglore, they just give Gujarati texture/taste to the white chutney by adding excess amount of Coriander.

First & Foremost, The Tiffin/Breakfast made in Tamilnadu is more or less similar to Andhra Pradesh & Kerala. The taste palette between these three states are the same.

Nothing to beat Masala dosa in Bangalore, you can walk in confident in any restaurant and have it. Idly more or less the same. Sambar I like the sweet one in Bangalore, but Chennai one is also great spicy. Vada is Crispy one, bangalore is the best. Same as Dosa, you can walk in and have in any small joint in Bangalore you get the same quality.
Of course Karnataka does better breakfast because most breakfast dishes are of Udipi origin!

Idly ,Tamil Nadu is better because of Ratio of Batter .Karnataka prepares Idly with Thari.( Ready Rava).Vada Bengaluru Vada are Crispy .Dosas ,Karnataka gives varieties and Tamil Nadu Crispy. In conclusion both Karnataka and Tamilnadu gives good IDC (Idly/Dosa/Coffee).

In Tamil Nadu I liked the breakfast in Madurai. I would say Madurai in TN ranks #1 in south Indian breakfast. Overall I would say Karnataka’s is better than Tamil nadu’s. But by a very thin margin.

Actually in Karnataka northern part we have 100s type of chutneys….not just served with idli dosa but even with various cuisines as like we North Karnataka people prefer jowar roti,sajjige roti many more. We hv thousands of varities of chutneys as well as meals n breakfast made of various items grown as like we prefer here jowar,wheat,rice n ragi. So it’s mistaken that karnataka has limited in terms of cuisines😶🙃
I live in Bengaluru but I love Tamilnadu style sambhar which is very similar to what we get in North India. Even dosa are very thin like the way we like. I prefer A2B and Rameshwaaram cafe more than mtr or ctr or udupis.

Best idly vada is from Bangalore I have been traveling this many parts of Tamilnadu and karnataka years but th e best one is from Bangalore and best all food availability any time is good at Bangalore .
Biased. Medu Vada when served hot in chennai is very crisp & tasty. Pongal again is good in chennai with variety of chutnies and sambars. As far as Dosai is concerned the typical Bene dosa is quite tasty in Bengaluru but it swims in oil and butter not very healthy. Chennai there are varieties of crisp thin dosas with masala that is typically good. It finally boils down to individual preference only. But in Bengaluru the good pricing is moderate while it is slightly costlier in Chennai
Mean sea level is the difference – Chennai is at zero ( or say 2m ) and Bangalore is about 900m. Jaggery in sambar is probably as much needed due to slow fermentation rate of idly batter.
Food style is regional for a reason, and this is my reasoning.

I would never eat at a A2B outlet in Bangalore as they serve Tami idly and dosa. I like my idlis to soak up the sambar and red chutney in the dosa.

Sambar is eaten with rice and NOT a good combination with dosè. Vidyarthibhavan, ctr and many places don’t serve sambar with dosè. Afterall dosè was invented in Karnataka. Whereas with idli, a sambar made with shallot onion goes well. In Tamilian style, sambar, chutneys and podi etc are all dumped on dosai and makes it somewhat tasty, but not distinguishable taste. Dosè and idli with chutney is the authentic combination.

While the Karnataka Dosa is tastier but it sits heavily in the stomach unlike it’s tamil counterpart.As far sambar,I am happy with both the varieties.When it comes to availability of vegetarian breakfast, Bangalore beats Madras with its nook and corner darshinis.
I prefer Tamilnadu’s softy & crispy Dosa with it’s sambar and Karnataka’s softy Idli Vada except sweety sambar.
Every darshini is a BF expert, can’t beat them in dosas or upmas or vadas n soft idlis. See the crowds you know who is better!!
As having a background from both the states here’s my take on this rivalry.
First the dosa, its definately Karnataka due to its krispy crunchy outside lathered with benne or butter and soft fluffy inside as compared to tamilnadu’s paper thin crispy golden brown dosa which is not quite filling many a times.
Secondly, idly which to be honest is pretty good from both the states.
Then the sambar, many people are very repulsive to the sweet Karnataka sambar. But i me who prefers sambar over chutney enjoys both of them equally.
Then the Pongal. I really have to give this one to tamilnadu. It really is the best with a pool of ghee in its periphery.
Finally the Vada. The best for the last. The Vada is truly the best in Karnataka not only compared to Tamilnadu but to any other south Indian state.
The coffe couldn’t be left out. Being a coffee addict who can’t start the day without a strong cup of filter coffee, i would say both the states have the absolute best coffees (provided it’s filter coffee).
You have not talked of cost. Bangalore darshinis are so cheap for quality of food served. It is almost half the cost .
I prefer Karnataka breakfast. Here dosa varieties are just awesome. Coffee here just brain burst. TN Pongal is irreplaceable.

I am from Karnataka and have stayed in Chennai for a few years.
The problem in Chennai was that their good restaurants were very expensive. But the food was really good.

One major difference you have missed. In Karnata, idli batter is prepared by mixing ground urud dal batter and coarse idli rava whereas in Tamil Nadu idli batter is prepared by grinding urud dhal and boiled rice/raw rice together. For this reason karnataka idlis are bit granular and tamil nadu idlies are spongy.

Both are good in different taste. We cannot compare. We can compare with other southern or northern states. Both TN and Karnataka are aligned in food which cannot beat by any other states.
Any food in Tamilnadu tastes good only in high class hotels whereas in karnataka even a tiny hotel maintains quality. But in serving chutneys, they are very frugal.
I have had both but Andhra Attu and Idly are far better in taste.
Karnataka idlis are better, but TN sambar is heavenly as is their Pongal. The medu vada is best in Karnataka, but again the chutney and Sambar are better in TN
My personal choice is Tamilnadu breakfast.
Tamilnadu too has many more breakfast options__ rava dosai,pudi kizhakkattai, arisi upma, morkuzhu,puliaval etc. But they are not on the menus of the likes of Sharavana, Sangeetha,Ratna etc!

Dosa is definitely the best in Karnataka as it is crispy from our side and soft from inside,. Vada no doubt Karnataka is the best,. Idly i would say is the same almost ,. But full credit to tamilnadu pongal it’s really too tasty.

[2:19 pm, 02/02/2023]: Although I agree with most of her assessments, methinks Karnataka idlys with their unipolar coconut chutney can’t hold a candle to the tri-color chutneys coupled with a variety of poDis 😋 Paruppu poDi is my favourite, followed by chutney poDi in burnt gingelly oil 🤤 As for her contention that Karnataka medu vadas are somewhat superior to their Tamizh bretheren, I reserve judgement on this issue (‘cos this amounts to splitting hairs!) Also, most important, she seems to be oblivious of the best breakfast of all! Maddur vade 🤪
[2:19 pm, 02/02/2023]: Delightful question to wake up to! But the answer is simple – Karnataka all the way for me. Idli doesn’t need the array of chutneys – simple coconut chutney is the best. As for dosa, the thin dosa neither has taste nor can support accompaniments. And she doesn’t even mention the other fab breakfasts like nucchinunde and guntpongal!

Give me the tasty flavourful chutney from Karnataka with its Coriander and Mint in symphony with coconut as an accompaniment to the idly.. a total boost to the idly and a great start.

MTR will always be my favourite, but Bangalore relatives say other places like Maiyyas are equally good without queue hassles. But what is most impressive about Bangalore is the large number of Sangeetha-Woodlands equivalents sprinkled all over the city. Modest-looking, moderate prices, good fare. You can be anywherein Bangalore and find such a place nearby. In Chennai you have to travel some distance, or patronize a third-rate joint close by and risk upsetting your tummy.
Good filter coffee? Very hard to get in Chennai. You may well be out of India.
In Bangalore, you can hop into the nearest joint and get a reasonably good drink.
Bangalore’s best breakfast item is the kesari bath-kara bath combination.
Looks like the author has seen Tamil tiffin items in YouTube where she doesn’t have absolute limited knowledge about Tamil breakfast.
Would suggest the author to spend some time in different parts of Tamilnadu and come to a list of items you can get as tiffin in Tamilnadu.

Karnataka is the best for Break fast food, TN has its own style though, The type of breakfast varieties is awesome in KAR.Coffe is grown here in KA and the legacy of finding the right filter coffee is there form ages .
also note that Sambhar made in the morning for Idli/Vade is totally different from the Sambhar made for meals in Karnataka, No doubt we have the best Dosa variety from Mysore Masala dosa, Davangere dosa, Mulbagal dosa etc etc, even in Maharashtra you get Karnataka type dosa/idli/sambhar only
I prefer Tamil Nadu breakfast any day. The Karnataka item I like is Kesari Baath. Have you checked Kerala Uzhunnu vada. This can be eaten even if it becomes cold and without any chutney or sambar. The ones prepared in the morning can be eaten even in the evening without loss of much taste and does not become like leather. Only problem is when buying parcel they don’t think both sambar and chutney is needed.
